Pronounciation of TH+S

Dear Adam
The kind of D you are talking about I guess have nothing to do with the sound of TH in English. Because I do believe the TH stuff comes from Indo-European roots. i.e. Mithra in Indian. It sounds like Arabic TH. i.e. tholth= 1 third.
The so-called "soft D" in the Norse languages sound more like L while tongue touches the lower front teeth. i.e. gade= street in Danish. I say that from my experience, that lots of foreigners pronounce the soft D as an L when speaking Danish. Danish doesn't have a letter for it

Posessive aspostrophes

Right you are. You just add an apostrophe to the end of the word when it ends with S, I do believe.
I'm learning Danish now and there is a bigger problem there, that is in Danish possessive form of name is i.e. Robert + s; without apostrophe. So Danes have problem writing the possessive form of Rasmus which is the name of many of the Danes.
People(s)

It may clarify the question.
We never say "People is..." We always say "People are..."
Besides, many of dictionaries say "plural: people
". See Longman for example. Or check this out:
